What to do with your leftover pumpkins this Halloween?
Halloween decorations are such fun, but soon we’ll be asking what we should do with all the leftover pumpkins? Don't just throw them out though! If your kids love spreading jam on their toast, why not try this easy recipe for pumpkin Jam instead? Get your kids involved in the kitchen and have a go at making these delicious homemade jams which is lovely on toasted bagels or toast. Pumpkin flesh can be quite bland so try adding orange / lemon / ginger / nutmeg to the mix, depending what flavours your kids like, to spice it up a bit. You can even package them in decorative jars which are lovely as a seasonal gift.
Pumpkin and Blood Orange Jam
Ingredients
  • 1 pumpkin
  • 1kg brown sugar
  • 1 blood orange
  • 1 spoonful of cinnamon
Recipe
Cut the pumpkin in half, deseed and pull out any stringy bits. Bake in the oven flesh upwards on tin foil, for half an hour. Scoop out the flesh into a food processor to make a smooth pumpkin puree.  Add this to a pot on the hob and pour in the sugar and the juice of one blood orange. Leave it on the boil for half an hour to reduce it down to thick Jam, then pour it into hot sterilised jars and seal.
